Søtoftes Have

Why this project is important?
This project will contribute with important information of the impact of covercropping and direct composting for market gardens and will provide valuable experience on the impact on health of the soil. 

Since 2017 Zenia and Amalie has been growing vegetables on about ½ ha in a market garden style. Their planning and utilization of the relatively small plot is quite impressive and they have a large production based on regenerative principles, manual work and permanent beds. They grow about 100 different crops and sell to restaurants in Copenhagen.

The signature of the produce they deliver is that they are harvested within 24 hours that means the taste of the produce is as fresh as can be. 

Foodprint Nordic is supporting Søtoftes Have on a relatively new technique of covercropping that will be adapted to the market garden principles. They will plant a cover which will be tilled down into the soil and at the same time compost tea with a high degree of healthy bacteria and fungi will be added to the soil. This will result in a type of direct compostation in the soil and make it ready to be cultivated just a few weeks later.
